To what extent has the dyke been subjected to archaelogical survey? As in any modern work site, there would have been a certain amount of debris generated by the builders of the dyke; broken tools, dropped items, etc. Roman implements are quite distinguishable from Saxon. Therefore, one would reason that it should be possible to put a date on the earthwork by studying such depositions, sampled from excavations along the dyke's length (to obtain a broader picture and rule out anomalies).
