I remember the fascinating Ch4 TV programme about this back in 2001. Have been trying to google for the recipe the producers released at the time, based on their findings, as I sent for it, and made it as well as I could. I think I remember Sumac being one of the ingredients, which I tracked down in hippy Totnes. (Am sorting out stuff every day while packing to move, so may come across it.)
