Interesting that it was kept in sugar, although I suppose it is an excellent preservative. A field archaeologist friend of mine has just spent the past few weeks working on a medieval 'ship' that has been preserved in salt at Nantwich. This wasn't a deliberate preservation of course and, whilst the salt did a great job of keeping the 'ship' intact, it was hell to work in.
