These fascinating naturally-formed rock citadels (their shapes including pinnacles, cones, domes, columns and pyramid shapes) have survived because they are made of a much harder rock than the plateau around it which has since weathered away.

Since the 4th century Christian ascetics sought sanctuary in some of the larger rocky structures and carved churches and chapels from them, indeed some of the rock faces nearby, while underground there are literally hundreds of subterranean cave-like dwellings, with passage-ways linking rock-cut rooms and buildings, many on different levels, with boulders that could be rolled into position across doorways in case of attack.

It's not that they are necessarily made of harder rock, rather that they have been protected by the hard rock cap stones which you can see in the photos. Hence the pyramid shape.

    "Fairy chimneys in the Cappadocia area differ in shape and from one place to another. The distinct types of spectacular fairy chimneys are found in the Kavak and Tahar members. In general fairy chimneys consist of a cap, a neck and a body. Bodies of fairy chimneys in both the Kavak and Tahar members consist of tuff, tuffite, volcanic ash, pumice, non-welded to medium welded tuff units; however, the caps of fairy chimneys are formed by welded tuffs in the Kavak member whereas they are formed by lahar andesite and basalt in the Tahar member".
